For those of you who don’t know me, and for those of you that do, it shouldn’t surprise you that 1 – I can’t cook or bake, 2 – I have a ton of dietary restrictions, so low carb or keto options often works best for me, and 3 – I eyeball everything (which doesn’t help fact #1), but if I can make it, you can too.
So these are just the ingredients I put in my frittata but you can literally put whatever else you want, mix up the ingredients based on what you have (e.g. hame, cheddar, mushroom), or put however much or little of each ingredient you want, hence the name “Throw It Altogether Baked Frittata”.
Throw It Altogether Baked Frittata
Super easy and quick prep meal that's low carb and super nutrient dense!
Ingredients
- 10 Eggs
- Handful Fresh Spinach
- Handful Cherry Tomatoes
- 1 Long Green Hot Pepper (diced)
- Prosciutto
- 2 cloves Garlic
- Heavy-hand Lactose-free 10% Coffee Cream You can sub this for non-lactose-free cream but I'm lactose intolerant, so it needs to be lactose-free.
- Handful Lactose-free Mozzerella You can sub this for non-lactose-free cream but I'm lactose intolerant, so it needs to be lactose-free.
- 1 tspn Dried Thyme Option to use fresh thyme if you prefer.
- Avocado (or olive) oil For cooking.
Instructions
- Crack and whisk all the eggs, cream, and thyme in a large bowl. Set aside.
- On medium-high heat, crisp up the prosciutto. Once crisped, take out of the pan and set aside in a corningware or similar oven safe casserole dish.
- Cook cherry tomatoes until they're slightly wrinkled. Once cooked, put into casserole dish.
- Pour a little bit of avocado (or olive) oil into the pan and cook garlic until fragrant.
- Place spinach into the pan with the garlic and cook until wilted. Once cooked, place into casserole dish.
- Place diced long hot green pepper and mozzarella into the casserole dish.
- Pour the egg mixture from Step #1 on top of all the ingredients inside the casserole dish. Mix everything around.
- Place in oven at 350 degrees Celsius for about 20-25 minutes. The frittata will be done once the egg is firm and doesn't jiggle or move when you take it out.*
Notes
*Depending on the oven, you may need to increase/decrease baking time.
